Description
This Savory Caprese Bread is a fresh Italian-inspired quick bread bursting with the flavors of mozzarella, sun-dried tomatoes, and basil. Soft, moist, and flavorful, it makes the perfect side for soups, pastas, or as a snack on its own.

- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup olive oil
- 2 tbsp plain Greek yogurt or sour cream
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 3/4 cup shredded mozzarella cheese
- 1/3 cup chopped sun-dried tomatoes (in oil, drained)
- 1/4 cup chopped fresh basil
- Optional: pinch of black pepper or red pepper flakes
Instructions
- Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a bowl, whisk together eggs, milk, olive oil, and yogurt until smooth.
- In another bowl, mix flour, baking powder, salt, and garlic powder.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Add in mozzarella, sun-dried tomatoes, and fresh basil. Stir lightly to distribute evenly.
- Pour batter into the prepared loaf pan and smooth the top.
- Optional: sprinkle with black pepper or red pepper flakes for extra flavor.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before slicing and serving warm or at room temperature.
Notes
- For a stronger cheese flavor, use aged mozzarella or add Parmesan.
- Store leftovers wrapped in the fridge for up to 3 days, or freeze slices for longer storage.
- This bread pairs wonderfully with olive oil dipping sauce or tomato soup.
- You can substitute fresh basil with baby spinach or arugula for variety.
