Description

This Savory Caprese Bread is a fresh Italian-inspired quick bread bursting with the flavors of mozzarella, sun-dried tomatoes, and basil. Soft, moist, and flavorful, it makes the perfect side for soups, pastas, or as a snack on its own.


Ingredients

  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup olive oil
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 3/4 cup shredded mozzarella cheese
  • 1/3 cup chopped sun-dried tomatoes (in oil, drained)
  • 1/4 cup chopped fresh basil
  • Optional: pinch of black pepper or red pepper flakes

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a bowl, whisk together eggs, milk, olive oil, and yogurt until smooth.
  3. In another bowl, mix flour, baking powder, salt, and garlic powder.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Add in mozzarella, sun-dried tomatoes, and fresh basil. Stir lightly to distribute evenly.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Optional: sprinkle with black pepper or red pepper flakes for extra flavor.
  8. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly before slicing and serving warm or at room temperature.

Notes

  • For a stronger cheese flavor, use aged mozzarella or add Parmesan.
  • Store leftovers wrapped in the fridge for up to 3 days, or freeze slices for longer storage.
  • This bread pairs wonderfully with olive oil dipping sauce or tomato soup.
  • You can substitute fresh basil with baby spinach or arugula for variety.
