Ingredients
Scale
- 12 ounces penne pasta
- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup parmesan cheese, freshly grated
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet over medium-high heat and bring a large pot of salted water to a boil.
- Add olive oil to the skillet, then cook the sausage, breaking it apart until browned. Remove excess grease if needed.
- Add chopped onion and garlic to the skillet and sauté for about 3 minutes until fragrant.
- Pour in heavy cream, reduce heat, and let it simmer for 3–4 minutes. Stir in parmesan cheese until melted and smooth.
- Boil the pasta until al dente. Reserve 1 cup of pasta water, then drain.
- Add pasta to the sauce, tossing to coat. Add reserved pasta water as needed for consistency.
- Season with salt and pepper to taste. Stir in chopped parsley and toss well.
- Serve warm with extra parmesan and black pepper if desired.
Notes
- Use freshly grated parmesan for better flavor and melt.
- Reserve pasta water to adjust sauce thickness.
- Try with spicy sausage for a kick.
- Great for meal prep — store in fridge for up to 3 days.
