- 4 fully cooked sausages, sliced into 1/4-inch circles
- 12 ounces broccoli florets
- 1 bell pepper, any color, thinly sliced
- ½ white onion, thinly sliced
- 4 ounces sliced baby bella mushrooms
- 3 tablespoons extra virgin olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
Easy Mustard Sauce
- ¼ cup mayonnaise
- 1 tablespoon dijon mustard
- 1 tablespoon water
- ½ teaspoon lemon juice
- ½ teaspoon garlic, minced
- ⅛ teaspoon salt
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the broccoli, bell pepper, onion, and mushrooms on the baking sheet. Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, oregano, and basil. Toss to coat evenly.
- Add the sliced sausages to the baking sheet and spread everything into an even layer.
- Roast in the oven for 20–25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
- Meanwhile, prepare the mustard sauce by whisking together mayonnaise, dijon mustard, water, lemon juice, minced garlic, and salt in a small bowl until smooth.
- Divide the roasted sausage and veggies into bowls and drizzle with mustard sauce before serving.
Notes
- Use chicken, turkey, or pork sausage—any fully cooked variety works well.
- The mustard sauce can be made ahead and stored in the fridge for up to 5 days.
- Serve over rice, quinoa, or cauliflower rice for a more filling meal.
