Salted Honey Pistachio Cookies are soft, chewy treats with a rich, nutty flavor from roasted pistachios and a delicate sweetness from honey. A sprinkle of flaky sea salt on top creates a perfect sweet-salty balance.

- 1/2 cup unsalted butter, softened
- 1/3 cup honey
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup shelled roasted pistachios, roughly chopped
- Flaky sea salt, for topping
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, honey, and brown sugar until light and fluffy.
- Add egg and vanilla extract, and mix until fully combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped pistachios.
- Scoop tablespoons of dough onto the baking sheet, spacing them about 2 inches apart.
- Lightly press down each dough ball and sprinkle a pinch of flaky sea salt on top.
- Bake for 10–12 minutes or until the edges are golden and centers are set.
- Cool on the pan for 5 minutes before transferring to a wire rack.
Notes
- Use roasted and lightly salted pistachios for added depth of flavor.
- For chewier cookies, slightly underbake them and let them finish on the pan.
- Store in an airtight container for up to 5 days.
