- 1/2 cup heavy cream
- 1 1/2 cups dark chocolate chips
- 4 tablespoons unsalted butter
- 3/4 cup granulated sugar
- 1 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder
Instructions
- Line a baking sheet with parchment paper and set aside. Measure and prep all ingredients.
- In a saucepan over medium heat, melt the granulated sugar, stirring occasionally, until it becomes a deep amber caramel.
- Carefully whisk in the heavy cream, butter, and sea salt until smooth. Remove from heat and stir in the vanilla extract.
- Place the dark chocolate chips in a bowl. Pour the hot caramel mixture over the chocolate and let sit for 1 minute. Stir until fully melted and smooth.
- Refrigerate the mixture for about 2 hours, or until firm enough to scoop.
- Using a spoon or cookie scoop, shape the chilled mixture into small balls. Roll between your palms for a smooth finish.
- Dust each truffle with cocoa powder and place back on the parchment-lined tray. Chill again if needed.
- Serve chilled or at room temperature and enjoy.
