Description

These salted caramel chocolate truffles are rich, smooth, and perfectly balanced with sweet and salty flavors. Each bite reveals a creamy caramel center wrapped in deep dark chocolate and finished with a dusting of cocoa powder.


Ingredients

  • 1/2 cup heavy cream
  • 1 1/2 cups dark chocolate chips
  • 4 tablespoons unsalted butter
  • 3/4 cup granulated sugar
  • 1 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder

Instructions

  1. Line a baking sheet with parchment paper and set aside. Measure and prep all ingredients.
  2. In a saucepan over medium heat, melt the granulated sugar, stirring occasionally, until it becomes a deep amber caramel.
  3. Carefully whisk in the heavy cream, butter, and sea salt until smooth. Remove from heat and stir in the vanilla extract.
  4. Place the dark chocolate chips in a bowl. Pour the hot caramel mixture over the chocolate and let sit for 1 minute. Stir until fully melted and smooth.
  5. Refrigerate the mixture for about 2 hours, or until firm enough to scoop.
  6. Using a spoon or cookie scoop, shape the chilled mixture into small balls. Roll between your palms for a smooth finish.
  7. Dust each truffle with cocoa powder and place back on the parchment-lined tray. Chill again if needed.
  8. Serve chilled or at room temperature and enjoy.
