Description

A vibrant and satisfying dish featuring pan-seared salmon served with crispy roasted new potatoes tossed in bagel seasoning, accompanied by tangy pickled red onions for a punch of flavor.


Ingredients

  • 2 salmon fillets
  • 300g new potatoes, halved
  • 1 tablespoon olive oil
  • 1 tablespoon everything bagel seasoning
  • 1/2 red onion, thinly sliced
  • 1/4 cup apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Fresh dill or parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 200°C (400°F). Toss halved new potatoes with olive oil and everything bagel seasoning on a baking sheet. Roast for 25-30 minutes until golden and crispy.
  2. In a small bowl, combine apple cider vinegar, sugar, and salt. Stir until dissolved, then add thinly sliced red onion. Let it sit for at least 20 minutes.
  3. Heat a non-stick pan over medium heat. Cook salmon fillets skin-side down for 4-5 minutes until skin is crispy, then flip and cook another 2-3 minutes or until desired doneness.
  4. Plate the salmon with crispy potatoes and a spoonful of pickled onions on the side.
  5. Garnish with fresh dill or parsley and serve with lemon wedges.

Notes

  • Marinate onions in advance for deeper flavor.
  • You can substitute trout or another firm fish for salmon.
  • Everything bagel seasoning can be homemade with sesame seeds, poppy seeds, garlic flakes, onion flakes, and salt.
