- 2 salmon fillets
- 300g new potatoes, halved
- 1 tablespoon olive oil
- 1 tablespoon everything bagel seasoning
- 1/2 red onion, thinly sliced
- 1/4 cup apple cider vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- Fresh dill or parsley, for garnish
- Lemon wedges, for serving
Instructions
- Preheat oven to 200°C (400°F). Toss halved new potatoes with olive oil and everything bagel seasoning on a baking sheet. Roast for 25-30 minutes until golden and crispy.
- In a small bowl, combine apple cider vinegar, sugar, and salt. Stir until dissolved, then add thinly sliced red onion. Let it sit for at least 20 minutes.
- Heat a non-stick pan over medium heat. Cook salmon fillets skin-side down for 4-5 minutes until skin is crispy, then flip and cook another 2-3 minutes or until desired doneness.
- Plate the salmon with crispy potatoes and a spoonful of pickled onions on the side.
- Garnish with fresh dill or parsley and serve with lemon wedges.
Notes
- Marinate onions in advance for deeper flavor.
- You can substitute trout or another firm fish for salmon.
- Everything bagel seasoning can be homemade with sesame seeds, poppy seeds, garlic flakes, onion flakes, and salt.
