- 2 salmon fillets (about 1 pound)
- 1 large ripe mango, diced
- 1 cup fresh corn kernels
- 1 small red onion, finely chopped
- 1 ripe avocado, diced
- 1/4 cup chopped cilantro
- Juice of 2 limes
- 1/3 cup plain Greek yogurt
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small corn tortillas
Instructions
- Heat your grill pan or skillet over medium-high heat until hot.
- In a bowl, combine diced mango, corn, red onion, avocado, cilantro, and lime juice. Add salt and pepper to taste and mix gently. Set aside.
- Season the salmon with chili powder, salt, and pepper. Lightly oil the grill pan and cook salmon for about 4 minutes per side until fully cooked. Flake with a fork.
- Warm the tortillas in the same skillet for about 30 seconds per side.
- In a small bowl, whisk Greek yogurt with a splash of lime juice and a pinch of salt for the drizzle.
- Assemble the tacos by filling each tortilla with flaked salmon, topping with mango corn salsa, and drizzling with the yogurt sauce. Serve with lime wedges.
Notes
- Don’t overcook the salmon — remove it from heat as soon as it’s opaque and flakes easily.
- The salsa can be made a day ahead and stored in the fridge.
- To warm tortillas, use a dry skillet or direct flame for added flavor.
