- 2 cups cooked shredded rotisserie chicken
- 2 cups cooked white or brown rice
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1/2 cup crushed Ritz crackers or breadcrumbs (optional, for topping)
- 2 tablespoons melted butter (if using topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until smooth.
- Stir in the cooked rice, shredded chicken, and 1 cup of cheddar cheese until fully combined.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Sprinkle remaining 1/2 cup of cheddar cheese over the top.
- If using, mix the crushed crackers or breadcrumbs with melted butter and sprinkle over the cheese layer.
- Bake for 25–30 minutes, or until hot and bubbly with a golden top.
- Let rest for 5 minutes before serving. Enjoy warm!
