Description

Rotisserie Chicken and Rice Casserole is a cozy, one-dish meal made with tender shredded chicken, fluffy rice, and a creamy, cheesy sauce. It’s the perfect solution for busy weeknights—quick, comforting, and family-friendly.


Ingredients

  • 2 cups cooked shredded rotisserie chicken
  • 2 cups cooked white or brown rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/2 cup crushed Ritz crackers or breadcrumbs (optional, for topping)
  • 2 tablespoons melted butter (if using topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until smooth.
  3. Stir in the cooked rice, shredded chicken, and 1 cup of cheddar cheese until fully combined.
  4. Transfer the mixture to the prepared baking dish and spread evenly.
  5. Sprinkle remaining 1/2 cup of cheddar cheese over the top.
  6. If using, mix the crushed crackers or breadcrumbs with melted butter and sprinkle over the cheese layer.
  7. Bake for 25–30 minutes, or until hot and bubbly with a golden top.
  8. Let rest for 5 minutes before serving. Enjoy warm!
