- 1 can (10 ounces) Rotel diced tomatoes with green chilies
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 tablespoon butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Cook the pasta according to the package directions. Drain and set aside.
- In a large skillet, melt butter over medium heat.
- Add the Rotel diced tomatoes with green chilies and cook for 2-3 minutes, stirring occasionally.
- Pour in the heavy cream and bring to a simmer. Cook for another 2-3 minutes until the sauce thickens slightly.
- Stir in the shredded cheddar cheese and season with garlic powder, onion powder, salt, and pepper. Cook until the cheese is fully melted and the sauce is smooth.
- Add the cooked pasta to the skillet and toss to coat the pasta evenly in the creamy sauce.
- Serve with fresh cilantro as a garnish, if desired.
Notes
- You can use any cheese of your choice, such as Monterey Jack or pepper jack, for extra flavor and spice.
- If you prefer a spicier dish, add more Rotel or a dash of hot sauce to taste.
- For a heartier version, add cooked chicken, ground beef, or sausage to the pasta.
