Description

Rotel Pasta is a creamy and spicy pasta dish made with Rotel tomatoes, cheese, and a flavorful blend of seasonings. It’s quick, easy, and perfect for weeknight dinners!


Ingredients

  • 12 ounces pasta (penne, rotini, or your choice)
  • 1 can (10 ounces) Rotel diced tomatoes with green chilies
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tablespoon butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the pasta according to the package directions. Drain and set aside.
  2. In a large skillet, melt butter over medium heat.
  3. Add the Rotel diced tomatoes with green chilies and cook for 2-3 minutes, stirring occasionally.
  4. Pour in the heavy cream and bring to a simmer. Cook for another 2-3 minutes until the sauce thickens slightly.
  5. Stir in the shredded cheddar cheese and season with garlic powder, onion powder, salt, and pepper. Cook until the cheese is fully melted and the sauce is smooth.
  6. Add the cooked pasta to the skillet and toss to coat the pasta evenly in the creamy sauce.
  7. Serve with fresh cilantro as a garnish, if desired.

Notes

  • You can use any cheese of your choice, such as Monterey Jack or pepper jack, for extra flavor and spice.
  • If you prefer a spicier dish, add more Rotel or a dash of hot sauce to taste.
  • For a heartier version, add cooked chicken, ground beef, or sausage to the pasta.
