Ingredients
Scale

- 1 (10 oz) can Rotel diced tomatoes with green chilies, drained
- 8 oz cream cheese, softened
- 2 cups shredded cheddar cheese
- 2 cups biscuit baking mix (like Bisquick)
Instructions

- In a large mixing bowl, combine the sausage, drained Rotel, cream cheese, cheddar cheese, and biscuit baking mix.
- Mix well until all ingredients are fully combined. The mixture will be thick and sticky.
- Roll the mixture into 1-inch balls and place them evenly spaced on the prepared baking sheet.
- Bake for 20-25 minutes, or until golden brown and cooked through.
- Serve warm with your favorite dipping sauce, if desired.
Notes
- For a spicier kick, use hot sausage or add a pinch of cayenne pepper to the mix.
- You can prepare the mixture ahead of time and refrigerate for up to 24 hours before baking.
- These sausage balls freeze well; bake straight from frozen, adding 5-7 extra minutes of cook time.
