Description

Cheesy, savory, and slightly spicy, these Rotel cream cheese sausage balls are the ultimate crowd-pleasing appetizer or brunch bite.

Ingredients

Scale
  • 1 pound ground sausage
  • 8 ounces cream cheese, softened
  • 1 can (10 ounces) Rotel diced tomatoes with green chilies, drained
  • 1 ½ cups shredded cheddar cheese
  • 2 cups biscuit baking mix (like Bisquick)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground sausage and softened cream cheese until well blended.
  3. Stir in drained Rotel, shredded cheddar cheese, and biscuit mix until fully incorporated.
  4. Roll the mixture into 1-inch balls and place them on the prepared baking sheet.
  5. Bake for 20 to 25 minutes, or until golden brown and cooked through.
  6. Let cool slightly before serving.

Notes

  • Use room temperature cream cheese for easier mixing.
  • Be sure to drain the Rotel thoroughly to avoid soggy texture.
  • Chill the mixture if too sticky before rolling into balls.
  • Freeze unbaked balls for later use and bake directly from frozen when ready.
