Description

A classic Roman Pasta recipe featuring spaghetti coated in a creamy egg and cheese sauce with crispy cured meat and freshly cracked black pepper, perfect for a quick and comforting meal

Ingredients

  • Spaghetti: 400 grams, long pasta that holds the creamy sauce perfectly
  • Eggs: 4 large, create the rich, silky texture of the sauce
  • Pecorino Romano Cheese: 1 cup finely grated, adds a sharp salty flavor
  • Parmesan Cheese: 1 cup finely grated, provides nutty balance to the Pecorino
  • Cured Meat Pieces: 150 grams diced, become crispy and savory when cooked
  • Black Pepper: 1 teaspoon freshly cracked, gives warmth and bold character
  • Olive Oil: 1 tablespoon, used to sauté the cured meat and add subtle richness

Instructions

  1. Preheat Your Equipment: Bring a large pot of salted water to a boil for the spaghetti.
  2. Combine Ingredients: In a mixing bowl, whisk together the eggs, Pecorino Romano, Parmesan, and cracked black pepper until smooth.
  3. Prepare Your Cooking Vessel: Heat olive oil in a wide skillet over medium heat. Add diced cured meat and cook until crispy and golden.
  4. Assemble the Dish: Cook spaghetti until al dente. Reserve about one cup of pasta water before draining.
  5. Cook to Perfection: Add hot pasta to the skillet with crispy cured meat. Remove from heat, then quickly pour in the egg and cheese mixture while tossing constantly.
  6. Finishing Touches: Add reserved pasta water gradually and toss until the sauce is creamy and coats the pasta evenly.
  7. Serve and Enjoy: Transfer to bowls, finish with extra grated cheese and cracked black pepper.

Notes

  • Use freshly grated cheese for smoother sauce
  • Reserve pasta water to help emulsify the sauce
  • Toss pasta off heat to prevent eggs from scrambling
  • Warm serving bowls to keep sauce silky
