Description

Golden, crispy sourdough toast topped with creamy goat cheese, blistered cherry tomatoes, and fresh basil for a tangy, savory, and vibrant dish that’s perfect for brunch or a light meal.


Ingredients

  • 2 cups cherry tomatoes
  • 4 ounces goat cheese
  • 4 thick slices sourdough bread
  • 2 tablespoons olive oil
  • 2 garlic cloves, peeled
  • A small handful of fresh basil, chopped
  • 1/2 teaspoon sea salt
  • Cracked black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss cherry tomatoes with olive oil, salt, and pepper until evenly coated.
  3. Spread the tomatoes out on the baking sheet in a single layer.
  4. Roast for 18 to 20 minutes, until blistered and soft.
  5. While the tomatoes roast, toast the sourdough slices under the broiler or in a toaster.
  6. Once toasted, rub each slice with a peeled garlic clove.
  7. Spread goat cheese generously on each slice.
  8. Top with roasted tomatoes and chopped basil. Serve warm.
