- 2 whole garlic bulbs
- 2 tablespoons olive oil
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the tops off the garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until golden and soft.
- While garlic roasts, mix sour cream, mayonnaise, lemon juice, salt, black pepper, and red pepper flakes in a bowl.
- Once garlic cools, squeeze out the cloves and mash them. Add to the bowl and mix until smooth.
- Chill the dip in the fridge for at least 1 hour for flavors to meld.
- Top with olive oil, red pepper flakes, and parsley before serving.
