Description

Roasted Corn Queso Fundido is a warm, cheesy dip loaded with smoky roasted corn, melted cheese, and a hint of spice. Perfect for sharing as an appetizer or snack at your next gathering, it pairs wonderfully with tortilla chips, warm tortillas, or even veggies.


Ingredients

  • 2 cups fresh or frozen corn kernels
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 tablespoon fresh cilantro, chopped (optional)
  • 1/2 cup red onion, finely chopped
  • 1 jalapeño, deseeded and finely chopped (optional, for heat)
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup whole milk
  • 1 tablespoon lime juice
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Spread the corn kernels on a baking sheet and drizzle with olive oil. Sprinkle with smoked paprika, cumin, and chili powder. Toss to coat evenly.
  2. Roast the corn in the oven for 15–20 minutes, or until golden and slightly charred, stirring halfway through. Remove from the oven and set aside to cool slightly.
  3. In a large skillet, heat a little oil over medium heat and sauté the red onion and jalapeño (if using) for 3–4 minutes, until softened.
  4. Add the roasted corn to the skillet with the onions and jalapeño. Stir to combine, then reduce heat to low.
  5. In a separate saucepan, combine the mozzarella and cheddar cheeses with sour cream and milk. Cook over low heat, stirring frequently, until the cheese is completely melted and smooth.
  6. Once the cheese mixture is smooth, pour it over the corn mixture in the skillet. Stir in lime juice, fresh cilantro (optional), and season with salt and pepper to taste. Stir to combine.
  7. Continue to cook for another 2–3 minutes, allowing the flavors to meld together. The queso should be creamy and smooth.
  8. Serve immediately with tortilla chips for dipping.

Notes

  • For a smoky kick, add a pinch of chipotle powder to the cheese mixture.
  • You can also add cooked chicken or chorizo for a heartier dip.
  • If you prefer a creamier texture, add more milk or sour cream as needed.
