Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot brewed coffee
  • 1 cup semi-sweet chocolate chips
  • For the fudge topping:
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. Add eggs, buttermilk, oil, and vanilla. Beat on medium speed until smooth.
  4. Stir in hot coffee until fully incorporated. The batter will be thin. Fold in the chocolate chips.
  5. Pour batter into prepared pan and bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the fudge topping, heat the heavy cream in a saucepan until it just begins to simmer. Remove from heat, add chocolate chips and butter, and stir until smooth and glossy.
  8. Pour the warm fudge topping over the cooled cake. Let set slightly before slicing.

Notes

  • Use espresso instead of coffee for a richer chocolate flavor.
  • The cake can be made a day in advance and stored at room temperature.
  • Top with berries or a scoop of vanilla ice cream for an extra treat.
