Rhubarb Magic Bars are a sweet and tangy twist on the classic seven-layer bar. With a buttery graham cracker crust, tart rhubarb, coconut, and white chocolate chips, all held together by sweetened condensed milk, these bars are rich, gooey, and irresistible.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup chopped fresh rhubarb
- 1 cup white chocolate chips
- 1 cup shredded sweetened coconut
- 1 cup chopped walnuts or pecans (optional)
- 1 can (14 oz) sweetened condensed milk
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
- In a bowl, mix graham cracker crumbs with melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan to form the crust.
- Sprinkle chopped rhubarb evenly over the crust, followed by white chocolate chips, coconut, and nuts if using.
- Pour sweetened condensed milk evenly over the entire pan, ensuring all layers are moistened.
- Bake for 25–30 minutes, or until edges are golden and center is set.
- Allow to cool completely in the pan before slicing into bars.
Notes
- Use fresh rhubarb for the best tart flavor, or frozen (thawed and drained) if out of season.
- Substitute white chocolate chips with butterscotch or dark chocolate for a different twist.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.
