These Reeses Butterfinger Cheesecake Bars are a decadent treat with a crunchy chocolate cookie crust, creamy peanut butter cheesecake filling, and chunks of Reeses and Butterfinger candy bars for the ultimate indulgence.

- 1 1/2 cups chocolate sandwich cookie crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1/2 cup creamy peanut butter
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup chopped Reeses peanut butter cups
- 1/2 cup chopped Butterfinger candy bars
- 1/2 cup semisweet chocolate chips (for drizzle, optional)
Instructions
- Preheat oven to 325°F (163°C) and line a 9×9-inch baking pan with parchment paper.
- Combine chocolate cookie crumbs and melted butter. Press firmly into the bottom of the prepared pan to form a crust. Set aside.
- In a large bowl, beat cream cheese, sugar, and peanut butter until smooth and creamy.
- Add eggs one at a time, mixing on low speed until combined. Stir in vanilla and sour cream.
- Fold in chopped Reeses and Butterfinger pieces, reserving some for topping.
- Pour the batter over the crust and smooth the top. Sprinkle reserved candy pieces over the batter.
- Bake for 35-40 minutes or until the center is set but still slightly jiggly. Cool completely, then refrigerate for at least 4 hours before slicing.
- Optional: Melt chocolate chips and drizzle over the bars before serving.
Notes
- Bars cut more cleanly when chilled thoroughly.
- You can use a graham cracker crust instead of chocolate cookie crumbs for a different flavor.
- Store bars in the refrigerator for up to 5 days.
