Description

These Reeses Butterfinger Cheesecake Bars are a decadent treat with a crunchy chocolate cookie crust, creamy peanut butter cheesecake filling, and chunks of Reeses and Butterfinger candy bars for the ultimate indulgence.


Ingredients

  • 1 1/2 cups chocolate sandwich cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup chopped Reeses peanut butter cups
  • 1/2 cup chopped Butterfinger candy bars
  • 1/2 cup semisweet chocolate chips (for drizzle, optional)

Instructions

  1. Preheat oven to 325°F (163°C) and line a 9×9-inch baking pan with parchment paper.
  2. Combine chocolate cookie crumbs and melted butter. Press firmly into the bottom of the prepared pan to form a crust. Set aside.
  3. In a large bowl, beat cream cheese, sugar, and peanut butter until smooth and creamy.
  4. Add eggs one at a time, mixing on low speed until combined. Stir in vanilla and sour cream.
  5. Fold in chopped Reeses and Butterfinger pieces, reserving some for topping.
  6. Pour the batter over the crust and smooth the top. Sprinkle reserved candy pieces over the batter.
  7. Bake for 35-40 minutes or until the center is set but still slightly jiggly. Cool completely, then refrigerate for at least 4 hours before slicing.
  8. Optional: Melt chocolate chips and drizzle over the bars before serving.

Notes

  • Bars cut more cleanly when chilled thoroughly.
  • You can use a graham cracker crust instead of chocolate cookie crumbs for a different flavor.
  • Store bars in the refrigerator for up to 5 days.
