Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine eggs and oil. Mix until smooth.
- Add red velvet cake mix and red food coloring gel. Stir until a dough forms.
- Use a tablespoon to scoop dough and roll into balls.
- Roll each ball in powdered sugar to coat thoroughly.
- Place cookies on prepared baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes until cookies are set but still soft in the center.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- For extra vibrancy, use gel food coloring instead of liquid.
