  • 1 tablespoon olive oil
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook the ravioli according to the package instructions, drain, and set aside, reserving 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add the asparagus and sauté for about 3-4 minutes, or until tender but still crisp.
  3. Add the cherry tomatoes and garlic to the skillet. Cook for another 2-3 minutes, until the tomatoes soften and release their juices.
  4. Stir in the dried oregano, basil, salt, and pepper. Add the cooked ravioli to the skillet along with the reserved pasta water. Toss everything together to combine.
  5. Cook for another 1-2 minutes, until the ravioli is well coated and heated through.
  6. Serve with a sprinkle of grated Parmesan cheese and garnish with fresh basil or parsley, if desired.
