Description

Ravioli with Tomatoes, Asparagus, Garlic, and Herbs is a light yet flavorful pasta dish that’s perfect for spring or summer. It combines tender cheese ravioli with sautéed asparagus, cherry tomatoes, garlic, and fresh herbs for a quick and satisfying vegetarian meal.


Ingredients

  • 1 (20 oz) package cheese ravioli (fresh or frozen)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 1/2 cups cherry tomatoes, halved
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp fresh basil, chopped
  • 1 tbsp fresh parsley, chopped
  • Grated Parmesan cheese, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Cook ravioli according to package instructions, then drain and set aside.
  2. While the ravioli cooks, heat olive oil in a large skillet over medium heat.
  3. Add garlic and sauté for 30 seconds until fragrant.
  4. Add asparagus and cook for 3–4 minutes until just tender.
  5. Add cherry tomatoes, salt, pepper, and red pepper flakes (if using). Cook for 2–3 more minutes until tomatoes are softened.
  6. Add the cooked ravioli to the skillet and gently toss to combine.
  7. Sprinkle with fresh basil and parsley. Serve with grated Parmesan on top.

Notes

  • Use any type of ravioli—spinach, mushroom, or meat—to vary the flavor.
  • Add a splash of lemon juice or white wine for extra brightness.
  • For a heartier version, add grilled chicken or shrimp.
