- 1 (20 oz) package cheese ravioli (fresh or frozen)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 1/2 cups cherry tomatoes, halved
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp fresh basil, chopped
- 1 tbsp fresh parsley, chopped
- Grated Parmesan cheese, for serving
Instructions
- Bring a large pot of salted water to a boil. Cook ravioli according to package instructions, then drain and set aside.
- While the ravioli cooks, heat olive oil in a large skillet over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add asparagus and cook for 3–4 minutes until just tender.
- Add cherry tomatoes, salt, pepper, and red pepper flakes (if using). Cook for 2–3 more minutes until tomatoes are softened.
- Add the cooked ravioli to the skillet and gently toss to combine.
- Sprinkle with fresh basil and parsley. Serve with grated Parmesan on top.
Notes
- Use any type of ravioli—spinach, mushroom, or meat—to vary the flavor.
- Add a splash of lemon juice or white wine for extra brightness.
- For a heartier version, add grilled chicken or shrimp.
