Description

A tender, buttery loaf cake studded with juicy raisins and infused with warm cinnamon, perfect for breakfast, tea time, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the butter and sugar until light and fluffy. Beat in eggs and vanilla.
  4. Add half the dry ingredients to the wet mixture, mix gently, then stir in milk. Add the remaining dry ingredients and fold in raisins.
  5. Pour the batter into the loaf pan, smoothing the top.
  6. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve.

Notes

  • Soak raisins in hot water or tea before using for extra juiciness.
  • Coat raisins in a little flour to prevent them from sinking.
  • Wrap and store at room temperature for up to 4 days or freeze for longer storage.
