- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup raisins
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, salt, and cinnamon.
- In another bowl, cream the butter and sugar until light and fluffy. Beat in eggs and vanilla.
- Add half the dry ingredients to the wet mixture, mix gently, then stir in milk. Add the remaining dry ingredients and fold in raisins.
- Pour the batter into the loaf pan, smoothing the top.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve.
Notes
- Soak raisins in hot water or tea before using for extra juiciness.
- Coat raisins in a little flour to prevent them from sinking.
- Wrap and store at room temperature for up to 4 days or freeze for longer storage.
