Description
A low-carb twist on pizza, these keto pizza pinwheels are made with a cheesy almond flour dough, rolled with pepperoni and mozzarella for a savory, satisfying snack or meal.
Ingredients
Scale
- 1 1/2 cups almond flour
- 1 cup shredded mozzarella cheese
- 2 oz cream cheese, softened
- 1 egg
- 1/2 tsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/2 cup pizza sauce (sugar-free)
- 1/2 cup sliced pepperoni
- 1/2 cup shredded mozzarella cheese (for filling)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a microwave-safe bowl, melt mozzarella and cream cheese together for 30-45 seconds. Stir until smooth and combined.
- Add the almond flour, egg, baking powder, garlic powder, oregano, and salt to the melted cheese mixture. Mix until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out into a rectangle (about 1/4 inch thick).
- Spread pizza sauce over the dough, leaving a small border around the edges. Sprinkle with shredded mozzarella and arrange the pepperoni slices evenly on top.
- Carefully roll the dough into a tight log and slice into 1-inch pinwheels.
- Place the pinwheels on the prepared baking sheet and bake for 12-15 minutes, or until golden and bubbly.
- Serve hot with extra pizza sauce for dipping, if desired.
Notes
- You can customize the filling with other keto-friendly toppings like olives, mushrooms, or cooked sausage.
- For a crispier texture, bake the pinwheels a little longer but keep an eye on them to avoid burning.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the oven.
