- 8 oz pasta (penne, rotini, or shells)
- 1 tbsp olive oil
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning (or homemade)
- 1/2 cup water
- 1 cup jarred queso cheese dip
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced tomatoes (canned or fresh)
- 1/4 cup chopped green onions
- Salt and pepper, to taste
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add ground meat and cook until browned, breaking it up with a spoon.
- Drain excess fat if needed, then stir in taco seasoning and water. Simmer for 2–3 minutes.
- Add queso, sour cream, and cheddar cheese. Stir until melted and combined.
- Stir in cooked pasta and diced tomatoes. Mix well until everything is coated.
- Simmer on low for 2–3 minutes to heat through. Season with salt and pepper to taste.
- Top with chopped green onions before serving.

- Use ground chicken or plant-based meat for a lighter or vegetarian version.
