  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup pumpkin puree
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • Unsalted butter, for frying
  • Maple syrup, for serving
  • Powdered sugar and whipped cream, optional for topping

Instructions

  1. Preheat a nonstick skillet or griddle over medium-low heat and melt a knob of butter.
  2. In a large bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla, and spices until smooth.
  3. Pour the custard into a shallow dish.
  4. Dip each bread slice into the custard, soaking 20–30 seconds per side.
  5. Place soaked slices onto the hot skillet and cook 3–4 minutes per side until golden and crisp.
  6. Dust with powdered sugar, add whipped cream if desired, and drizzle with maple syrup.
