Description

A refreshing, high-protein coffee jelly made with strong brewed coffee, layered with a creamy vanilla protein milk mixture. Light, jiggly, and naturally sweetened, this chilled treat is perfect for breakfast, snack time, or a light dessert.


Ingredients

  • 2 cups strong brewed coffee
  • 2 tablespoons unflavored gelatin powder
  • 1 scoop (about 30 grams) vanilla protein powder
  • 1 cup milk
  • 2 tablespoons maple syrup

Instructions

  1. Pour 1/2 cup of the brewed coffee into a bowl and sprinkle the gelatin evenly over it. Let it bloom for 5 minutes.
  2. Warm the remaining 1 1/2 cups of coffee in a small saucepan over medium low heat. Add the bloomed gelatin and stir until completely dissolved. Do not boil.
  3. Pour the coffee gelatin mixture into an 8×8 inch glass dish and refrigerate for about 45 minutes, until slightly set but not fully firm.
  4. In a separate bowl, whisk together the vanilla protein powder, milk, and maple syrup until smooth and lump free.
  5. Gently pour the protein milk mixture over the partially set coffee layer.
  6. Refrigerate for at least 2 hours, or until fully firm.
  7. Slice into cubes and serve chilled.

Notes

  • Use strong brewed coffee for the best flavor balance.
  • Allow the first layer to partially set before adding the second layer to keep layers defined.
  • Taste the protein mixture before pouring and adjust sweetness if needed.
