- 450 grams raw prawns, peeled and deveined
- 250 grams dry orzo pasta
- 100 grams sun-dried tomatoes, chopped
- 100 grams fresh spinach, roughly chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 50 grams grated parmesan cheese
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, freshly ground
Instructions
- Bring a medium saucepan of salted water to a boil over medium high heat for the orzo.
- Pat the prawns dry and season lightly with salt and black pepper.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
- Add the seasoned prawns in a single layer and cook for 2 to 3 minutes per side until pink and opaque. Remove and set aside. In the same skillet, add the chopped sun-dried tomatoes.
- Cook the orzo in boiling water according to package instructions, about 8 to 10 minutes, until tender. Drain, reserving 2 tablespoons of pasta water. Add the drained orzo to the skillet with the tomatoes. Stir in reserved pasta water and spinach, allowing spinach to wilt.
- Return the prawns to the skillet. Add grated parmesan and chopped parsley. Stir gently until creamy and well combined.
- Taste, adjust seasoning if needed, and serve warm.
Notes
- Do not overcook the prawns to avoid a rubbery texture.
- Reserve pasta water to help create a silky sauce.
- Taste before adding extra salt since parmesan adds natural saltiness.
