- 1 cup fresh pineapple, diced
- 1 cup ripe mango, diced
- 1/2 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1 small jalapeño, seeded and minced (adjust to taste)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- In a medium bowl, combine pineapple, mango, bell pepper, red onion, jalapeño, and cilantro.
- Squeeze fresh lime juice over the mixture and season with salt to taste.
- Stir gently until all ingredients are well mixed.
- Cover and refrigerate for at least 15–30 minutes before serving to allow flavors to meld.
Notes
- Use ripe but firm mango and pineapple for best texture.
- Add diced avocado for creaminess, or cucumber for extra crunch.
- Delicious over grilled fish, shrimp, chicken, or tacos.
