Pineapple Cowboy Candy is a sweet, spicy, and tangy treat made by simmering jalapeño slices and pineapple chunks in a sugary, vinegary syrup. Perfect as a relish, burger topper, or bold appetizer, this addictive condiment brings the heat with a tropical twist.

- 2 cups fresh or canned pineapple chunks (drained if canned)
- 1 lb fresh jalapeños, sliced into rings
- 2 cups granulated sugar
- 1/2 cup apple cider vinegar
- 1/2 teaspoon turmeric
- 1/2 teaspoon ginger powder
- 1/4 teaspoon garlic powder
- Pinch of salt
Instructions
- In a medium saucepan, combine sugar, apple cider vinegar, turmeric, ginger, garlic powder, and salt. Bring to a simmer over medium heat, stirring until sugar dissolves.
- Add jalapeño slices and pineapple chunks. Reduce heat and simmer for 10–15 minutes until jalapeños are slightly softened and syrup thickens slightly.
- Using a slotted spoon, transfer pineapple and jalapeños into sterilized jars.
- Pour hot syrup over the contents to cover completely, leaving 1/2-inch headspace.
- Wipe rims, seal with lids, and let cool. Refrigerate for immediate use or water-bath can for shelf-stable storage.
- Allow to rest for at least 1 week before eating for best flavor.
Notes
- Use gloves when handling fresh jalapeños to avoid irritation.
- Great served on burgers, hot dogs, tacos, or cream cheese with crackers.
- The syrup can also be used as a glaze or marinade for grilled meats.
