- ½ cup mayonnaise
- ¼ cup cream cheese, softened
- ¼ cup diced pimentos, drained
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne pepper (optional)
- Salt and pepper, to taste
- 2 tbsp chopped chives or green onions (for garnish)
Instructions
- Cook French fries according to package instructions or until golden and crispy if homemade. Set aside.
- In a mixing bowl, combine cheddar cheese, mayonnaise, cream cheese, diced pimentos, garlic powder, onion powder, cayenne (if using), salt, and pepper. Mix until smooth and well incorporated.
- Transfer the pimento cheese mixture to a small saucepan. Heat over low heat, stirring constantly until warm and creamy.
- Arrange the hot fries on a serving plate or baking sheet. Pour the warm pimento cheese sauce evenly over the fries.
- Garnish with chopped chives or green onions and serve immediately.
