- 1 lb frog legs or frog meat, cut into bite-sized balls
- 1 cup white vinegar
- 1/2 cup water
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 cloves garlic, sliced
- 1 small onion, thinly sliced
- 1 teaspoon black peppercorns
- 1 bay leaf
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
- Blanch frog balls in boiling water for 2–3 minutes until just cooked. Drain and set aside.
- In a saucepan, combine vinegar, water, sugar, salt, garlic, onion, peppercorns, bay leaf, and red pepper flakes. Bring to a boil, then simmer for 5 minutes.
- Remove from heat and let the pickling liquid cool slightly.
- Place frog balls in a sterilized jar and pour the warm pickling liquid over them, making sure they are fully submerged.
- Seal the jar and refrigerate for at least 24 hours before serving to allow flavors to develop.
- Serve chilled as a tangy appetizer or snack.
