- 4 medium sweet potatoes
- 2 cups chicken thighs, boneless and skinless
- 2 tablespoons olive oil
- 3 tablespoons peri peri sauce
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup plain yogurt
- 1 lemon, juiced
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 200°C and line a baking tray.
- In a bowl, combine chicken thighs with olive oil, peri peri sauce, minced garlic, paprika, salt, and black pepper.
- Place whole sweet potatoes on the tray and prick them slightly with a fork.
- Roast sweet potatoes for 40 minutes until soft, while cooking the chicken in a pan or oven until fully cooked.
- Slice open the roasted sweet potatoes and fluff the inside with a spoon.
- Fill each sweet potato with cooked peri peri chicken.
- Drizzle with plain yogurt, squeeze fresh lemon juice on top, and sprinkle chopped parsley before serving.
