- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/2 cup semi-sweet chocolate chips
- 1/3 cup crushed peppermint candies
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin or line with parchment cups.
- In a bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, vanilla extract, and peppermint extract until smooth.
- In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
- Gradually add dry ingredients to wet mixture, stirring gently. Fold in the chocolate chips.
- Spoon batter into muffin cups, filling each about 3/4 full. Tap the tin to level the batter.
- Bake for 12–15 minutes or until tops are set and slightly crackly.
- Immediately sprinkle with crushed peppermint candies. Cool in tin for 10 minutes, then transfer to wire rack.
- Serve warm or cool completely for a firmer texture.
Notes
- Use room temperature eggs and butter for better mixing.
- Crush peppermint candies just before using to keep them fresh.
- Freeze leftovers in a sealed bag for up to 2 months.
- Chilling before serving helps set the texture.
