Description

Peinirli is a traditional Greek boat-shaped pizza filled with melted cheese, savory toppings, and baked to golden perfection. With its fluffy dough and signature shape, this dish makes a delicious and visually stunning alternative to typical pizza, ideal for lunch, brunch, or dinner.


Ingredients

  • 2 1/4 tsp active dry yeast
  • 1 cup warm water (110°F/45°C)
  • 1 tsp sugar
  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 cup shredded mozzarella or kasseri cheese
  • 1/2 cup crumbled feta cheese
  • 1/2 cup diced ham, sausage, or cooked bacon (optional)
  • 1 egg (optional, for topping)
  • Butter for brushing (optional)

Instructions

  1. In a small bowl, combine yeast, sugar, and warm water. Let sit for 5–10 minutes until frothy.
  2. In a large bowl, mix flour and salt. Add yeast mixture and olive oil. Knead until a soft dough forms, about 8–10 minutes.
  3. Cover the dough and let rise in a warm place for 1 hour or until doubled in size.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. Punch down dough and divide into 2–4 portions. Roll each portion into an oval, about 1/4 inch thick.
  6. Place ovals on the baking sheet. Fill the center with cheese and toppings, leaving a border around the edge.
  7. Fold and pinch the long sides inward to create a boat shape, leaving the filling exposed.
  8. Brush edges with melted butter if desired. Crack an egg on top of each if using.
  9. Bake for 18–22 minutes, or until crust is golden and cheese is bubbly.
  10. Serve hot, optionally brushed again with butter for shine.

Notes

  • Kasseri or graviera cheese gives a more authentic Greek flavor.
  • Customize fillings with vegetables, herbs, or different meats.
  • Add a cracked egg during the last 5 minutes of baking for a traditional touch.
