- 1 teaspoon lemon juice
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, minced garlic, salt, and pepper. Spread evenly on a baking sheet.
- Roast for 25–30 minutes until golden and crispy, turning halfway through.
- Meanwhile, mix mayonnaise, harissa paste, and lemon juice in a small bowl to make harissa mayo.
- Once potatoes are roasted, toss them with grated Pecorino cheese while still hot.
- Serve the potatoes on a plate with a generous dollop of harissa mayo underneath or on the side.
- Garnish with chopped parsley and serve warm.
