- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the Filling:
- 1/4 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1 cup powdered sugar
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Roll dough into 1-inch balls and place on prepared baking sheet. Flatten slightly with a fork to make a crisscross pattern.
- Bake for 8–10 minutes or until lightly golden. Let cool completely.
- While cookies cool, prepare the filling: Beat butter and peanut butter together until smooth, then mix in powdered sugar. Add milk 1 tablespoon at a time until desired consistency is reached.
- Spread filling on the flat side of one cookie and top with another to form a sandwich. Repeat with remaining cookies.
Notes
- For a chocolate twist, mix mini chocolate chips into the filling.
- Cookies can be stored in an airtight container at room temperature for up to 4 days or refrigerated for longer freshness.
- For perfect sandwiches, match cookies of similar size before filling.
