Description

Peanut Butter Sandwich Cookies are rich, soft cookies filled with a creamy, sweet peanut butter frosting. They’re the perfect treat for peanut butter lovers—chewy on the outside, luscious in the middle, and totally irresistible.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Filling:

  • 1/4 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1 cup powdered sugar
  • 12 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Roll dough into 1-inch balls and place on prepared baking sheet. Flatten slightly with a fork to make a crisscross pattern.
  7. Bake for 8–10 minutes or until lightly golden. Let cool completely.
  8. While cookies cool, prepare the filling: Beat butter and peanut butter together until smooth, then mix in powdered sugar. Add milk 1 tablespoon at a time until desired consistency is reached.
  9. Spread filling on the flat side of one cookie and top with another to form a sandwich. Repeat with remaining cookies.

Notes

  • For a chocolate twist, mix mini chocolate chips into the filling.
  • Cookies can be stored in an airtight container at room temperature for up to 4 days or refrigerated for longer freshness.
