Instructions
- In a large bowl, mix peanut butter, butter, and vanilla until smooth and creamy.
- Gradually add powdered sugar, mixing until a thick dough forms.
- Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet. Refrigerate for at least 30 minutes.
- In a microwave-safe bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate using a fork or toothpick, letting excess chocolate drip off.
- Place back on the baking sheet and refrigerate until the chocolate is set, about 20 minutes.
