Description

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 3 1/2 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil or shortening (optional, for smoother chocolate)

Instructions

  1. In a large bowl, mix peanut butter, butter, and vanilla until smooth and creamy.
  2. Gradually add powdered sugar, mixing until a thick dough forms.
  3. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet. Refrigerate for at least 30 minutes.
  4. In a microwave-safe bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring until smooth.
  5. Dip each peanut butter ball into the melted chocolate using a fork or toothpick, letting excess chocolate drip off.
  6. Place back on the baking sheet and refrigerate until the chocolate is set, about 20 minutes.
