A classic crunchy candy made from roasted peanuts and caramelized sugar, perfect for holiday treats or homemade gifts.

- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1 cup roasted peanuts (unsalted)
- 2 tbsp butter
- 1 tsp vanilla extract
- 1 tsp baking soda
- Pinch of salt (optional)
Instructions
- Line a baking sheet with parchment paper or lightly grease it and set aside.
- In a medium saucepan over medium heat, combine sugar, corn syrup, and water. Stir until the sugar dissolves.
- Bring the mixture to a boil without stirring. Cook until it reaches 300°F (150°C) on a candy thermometer (hard crack stage).
- Stir in the peanuts and continue to cook for 1–2 minutes.
- Remove from heat and quickly stir in butter, vanilla extract, baking soda, and salt (if using). The mixture will foam up.
- Immediately pour the mixture onto the prepared baking sheet and spread it out evenly.
- Allow to cool completely, then break into pieces and store in an airtight container.
Notes
- Be careful when working with hot sugar—it can burn quickly.
- Use a silicone spatula or greased metal spoon to spread the hot brittle.
- Try using other nuts like almonds or cashews for variety.
