Description

A classic crunchy candy made from roasted peanuts and caramelized sugar, perfect for holiday treats or homemade gifts.


Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 cup roasted peanuts (unsalted)
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt (optional)

Instructions

  1. Line a baking sheet with parchment paper or lightly grease it and set aside.
  2. In a medium saucepan over medium heat, combine sugar, corn syrup, and water. Stir until the sugar dissolves.
  3. Bring the mixture to a boil without stirring. Cook until it reaches 300°F (150°C) on a candy thermometer (hard crack stage).
  4. Stir in the peanuts and continue to cook for 1–2 minutes.
  5. Remove from heat and quickly stir in butter, vanilla extract, baking soda, and salt (if using). The mixture will foam up.
  6. Immediately pour the mixture onto the prepared baking sheet and spread it out evenly.
  7. Allow to cool completely, then break into pieces and store in an airtight container.

Notes

  • Be careful when working with hot sugar—it can burn quickly.
  • Use a silicone spatula or greased metal spoon to spread the hot brittle.
  • Try using other nuts like almonds or cashews for variety.
