A refreshing and tangy Turkish potato salad, featuring boiled potatoes, fresh herbs, and a zesty dressing made with olive oil, lemon, and vinegar, perfect as a side dish for any meal.

- 4 large potatoes, peeled and cubed
- 1/2 cup olive oil
- 1 tablespoon red wine vinegar
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon mustard (optional)
- 1/4 cup fresh parsley, chopped
- 2 green onions, chopped
- 1/4 cup dill, chopped
- Salt and pepper to taste
- 1/4 teaspoon paprika (for garnish)
Instructions
- Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and let cool slightly.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, mustard (if using), salt, and pepper.
- In a large mixing bowl, combine the cooled potatoes with chopped parsley, green onions, and dill.
- Pour the dressing over the potatoes and toss gently to combine, making sure all the potatoes are coated.
- Garnish with paprika and additional fresh herbs, if desired. Serve chilled or at room temperature.
Notes
- For extra flavor, add a handful of chopped cucumbers or olives to the salad.
- This salad can be made a day ahead for the flavors to meld together.
- If you like a creamier version, mix in a tablespoon of Greek yogurt or mayonnaise.
