Description

A refreshing and tangy Turkish potato salad, featuring boiled potatoes, fresh herbs, and a zesty dressing made with olive oil, lemon, and vinegar, perfect as a side dish for any meal.


Ingredients

  • 4 large potatoes, peeled and cubed
  • 1/2 cup olive oil
  • 1 tablespoon red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon mustard (optional)
  • 1/4 cup fresh parsley, chopped
  • 2 green onions, chopped
  • 1/4 cup dill, chopped
  • Salt and pepper to taste
  • 1/4 teaspoon paprika (for garnish)

Instructions

  1. Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and let cool slightly.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, mustard (if using), salt, and pepper.
  3. In a large mixing bowl, combine the cooled potatoes with chopped parsley, green onions, and dill.
  4. Pour the dressing over the potatoes and toss gently to combine, making sure all the potatoes are coated.
  5. Garnish with paprika and additional fresh herbs, if desired. Serve chilled or at room temperature.

Notes

  • For extra flavor, add a handful of chopped cucumbers or olives to the salad.
  • This salad can be made a day ahead for the flavors to meld together.
  • If you like a creamier version, mix in a tablespoon of Greek yogurt or mayonnaise.
