Description

A fresh and vibrant pasta salad packed with crisp vegetables, creamy feta, and a zesty lemon dressing. Perfect for quick meals, gatherings, or make-ahead lunches.


Ingredients

  • 250 grams dry pasta
  • 200 grams cherry tomatoes
  • 1 medium cucumber
  • 100 grams black olives
  • 150 grams feta cheese
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta until tender, then drain and rinse under cold water.
  3. Place the cooled pasta in a large mixing bowl.
  4. Add cherry tomatoes, cucumber, olives, feta cheese, and parsley.
  5. In a small bowl, whisk olive oil, lemon juice, minced garlic, salt, and black pepper.
  6. Pour the dressing over the salad and toss gently until evenly coated.
  7. Chill for 30 minutes before serving, then serve and enjoy.
