- 2 pounds baby potatoes, halved
- 4 tablespoons butter, melted
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup Parmesan cheese, freshly grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a large bowl, combine melted butter, olive oil, minced garlic, salt, and pepper.
- Add the halved potatoes and toss to coat them evenly in the mixture.
- Spread the potatoes cut-side down on the prepared baking sheet.
- Sprinkle Parmesan cheese evenly over the top of the potatoes.
- Roast for 30 to 35 minutes, flipping halfway through, until golden and crispy.
- Remove from the oven, sprinkle with fresh parsley, and serve hot.
