- 1 pound small pasta shells
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 2 1/2 cups milk
- 1 1/2 cups heavy cream
- 2 cups sharp white cheddar, shredded
- 1 teaspoon dijon mustard
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large saucepan over medium heat, melt the butter.
- Add flour and whisk for 1-2 minutes to form a roux.
- Slowly add milk and heavy cream, stirring constantly until smooth.
- Bring mixture to a gentle boil and then lower the heat and add the cheddar, mustard, salt, and pepper.
- Remove from heat once cheese is melted and sauce is creamy.
- Add the cooked pasta into the sauce and fold together until well combined.
- Serve immediately while warm.

- For a richer flavor, use sharp cheddar.
