Description

Onion Tomato Pie is a savory Southern-style dish made with fresh tomatoes, caramelized onions, herbs, and a cheesy topping baked in a flaky pie crust — perfect as a side or light main course.

  • 1 9-inch pie crust (store-bought or homemade)
  • 34 medium ripe tomatoes, sliced
  • 2 medium onions, thinly sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried basil or thyme
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mayonnaise or Greek yogurt
  • 2 tbsp chopped fresh parsley or green onions (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Blind bake the pie crust for 8–10 minutes, then set aside to cool slightly.
  2. In a skillet, heat olive oil over medium heat. Add sliced onions and cook for 10–15 minutes until caramelized. Season with salt and pepper.
  3. Layer half the tomato slices in the pie crust. Sprinkle with a bit of salt and pepper.
  4. Spread the caramelized onions evenly over the tomatoes. Add the remaining tomato slices on top.
  5. In a small bowl, mix mozzarella, Parmesan, and mayonnaise (or Greek yogurt). Spread the cheese mixture evenly over the top layer.
  6. Bake for 30–35 minutes until golden and bubbly. Let rest for 10 minutes before slicing.
  7. Garnish with fresh parsley or green onions and serve warm or at room temperature.

Notes

  • Use heirloom tomatoes for extra flavor and color.
  • Salt tomato slices and let them drain on paper towels before assembling to avoid sogginess.
  • Pairs well with a light green salad or grilled meats.
