This One Pot Taco Spaghetti combines the bold, zesty flavors of tacos with the comfort of pasta in a quick and easy one-pan meal. Made with ground turkey, taco seasoning, tomatoes, and melty cheese, it’s a weeknight dinner the whole family will love.

- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 package taco seasoning
- 1 can Ro*Tel® Mild Diced Tomatoes & Green Chilies
- 1 tablespoon tomato paste
- 3 cups water
- 8 ounces spaghetti
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 roma tomato, diced
Instructions
- Heat olive oil in a large pot or deep skillet over medium heat.
- Add the ground turkey and cook until browned, breaking it apart with a spoon.
- Stir in the taco seasoning, Ro*Tel tomatoes with chilies, and tomato paste. Mix well.
- Add the water and bring the mixture to a simmer.
- Break the spaghetti in half and add it to the pot. Stir to combine, ensuring the pasta is submerged.
- Cover and cook for 12–15 minutes, stirring occasionally, until the spaghetti is tender and most of the liquid is absorbed.
- Remove from heat and stir in the shredded cheddar and mozzarella cheeses until melted and creamy.
- Top with diced roma tomato before serving.
Notes
- You can substitute ground beef or chicken for the ground turkey.
- Add black beans or corn for extra texture and flavor.
- Adjust the spice level by using hot or medium Ro*Tel instead of mild.
- Leftovers reheat well—store in an airtight container for up to 3 days.
