A hearty, flavorful twist on traditional lasagne, this one-pan dish features layers of sausage, roasted peppers, and pasta sheets all baked together in a rich tomato sauce with creamy cheese.

- 250g Italian sausage, casings removed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 400g canned crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 150g fresh lasagne sheets, cut into squares
- 100g ricotta cheese
- 100g shredded mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- Preheat oven to 200°C (400°F).
- In an ovenproof skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
- Add onion, garlic, and sliced peppers. Cook for 5-7 minutes until softened.
- Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 5 minutes.
- Layer in the lasagne sheets, pressing them slightly into the sauce. Dot with ricotta and sprinkle mozzarella on top.
- Transfer the skillet to the oven and bake for 20-25 minutes until bubbly and golden.
- Let cool for a few minutes, then garnish with fresh basil before serving.
Notes
- You can swap sausage for ground beef or a vegetarian alternative.
- Use jarred roasted peppers for convenience and extra smokiness.
- Add a splash of red wine to the sauce for depth of flavor.
