Description

A hearty, flavorful twist on traditional lasagne, this one-pan dish features layers of sausage, roasted peppers, and pasta sheets all baked together in a rich tomato sauce with creamy cheese.


Ingredients

  • 250g Italian sausage, casings removed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 400g canned crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 150g fresh lasagne sheets, cut into squares
  • 100g ricotta cheese
  • 100g shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions

  1. Preheat oven to 200°C (400°F).
  2. In an ovenproof skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
  3. Add onion, garlic, and sliced peppers. Cook for 5-7 minutes until softened.
  4. Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 5 minutes.
  5. Layer in the lasagne sheets, pressing them slightly into the sauce. Dot with ricotta and sprinkle mozzarella on top.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until bubbly and golden.
  7. Let cool for a few minutes, then garnish with fresh basil before serving.

Notes

  • You can swap sausage for ground beef or a vegetarian alternative.
  • Use jarred roasted peppers for convenience and extra smokiness.
  • Add a splash of red wine to the sauce for depth of flavor.
