  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 4 large egg yolks, lightly beaten
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons granulated sugar (for meringue)

Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  2. Gradually whisk in milk until smooth. Cook over medium heat, stirring constantly, until mixture thickens and begins to bubble.
  3. Whisk a small amount of the hot mixture into the beaten egg yolks to temper, then slowly add yolks back into the saucepan while whisking continuously.
  4. Continue cooking for 2-3 minutes more, until thickened. Remove from heat and stir in butter and vanilla.
  5. Pour the chocolate filling into the pre-baked pie crust and smooth the top.
  6. Preheat oven to 350°F (175°C).
  7. To make the meringue, beat egg whites and cream of tartar on high speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until stiff, glossy peaks form.
  8. Spread meringue over the hot pie filling, sealing to the edges of the crust to prevent shrinking.
  9. Bake for 10-15 minutes, or until the meringue is golden brown.
  10. Cool completely before slicing to allow the filling to set.
