Instructions
- Line a baking sheet with parchment paper.
- In a microwave-safe bowl or double boiler, melt white chocolate and coconut oil together until smooth, stirring frequently.
- In a large bowl, mix oats, dried cranberries, chopped nuts (if using), and salt.
- Pour melted white chocolate mixture over the oat mixture and stir until everything is well coated.
- Drop spoonfuls of the mixture onto the prepared baking sheet, forming clusters.
- Chill in the refrigerator for 30–45 minutes until firm.
- Store in an airtight container in the fridge for up to one week.
