Description
These no-bake S’mores Cheesecake Bars combine the classic campfire flavors of graham crackers, chocolate, and marshmallow in a cool, creamy layered dessert.

- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 2 tbsp granulated sugar
- 8 oz (225g) cream cheese, softened
- 1 cup marshmallow fluff
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 3/4 cup milk chocolate chips, melted and slightly cooled
- Mini marshmallows and crushed graham crackers for topping
Instructions
- Line an 8×8 inch pan with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan. Chill for 10 minutes.
- In a large bowl, beat cream cheese, marshmallow fluff, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream to stiff peaks and fold into the cheesecake mixture.
- Spread half the cheesecake mixture over the crust.
- Drizzle with half of the melted chocolate, then repeat with remaining cheesecake mixture and chocolate.
- Swirl the top with a knife, then sprinkle with mini marshmallows and crushed graham crackers.
- Refrigerate for at least 4 hours or overnight before slicing into bars.
Notes
- Use a torch to lightly toast marshmallows before serving for an authentic s’mores flavor.
- Chill longer for firmer bars and cleaner cuts.
- Substitute chocolate chips with dark chocolate for a richer taste.
