- 1/2 cup natural peanut butter
- 1/3 cup honey or maple syrup
- 1/4 cup mini chocolate chips
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- In a large bowl, combine oats and salt.
- In a small saucepan over low heat, stir together peanut butter and honey until melted and smooth. Remove from heat and stir in vanilla extract.
- Pour the warm peanut butter mixture over the oats and mix until well combined.
- Let the mixture cool slightly, then fold in chocolate chips (so they don’t melt).
- Line an 8×8-inch baking pan with parchment paper and press the mixture firmly into the pan.
- Refrigerate for at least 1 hour, or until firm. Slice into bars and store in the fridge for up to a week.
