- 1/2 tsp peppermint extract
- 1 1/2 cups crispy rice cereal or cornflakes
- 1/2 cup mini chocolate chips
- Green food coloring (optional)
Instructions
- Line a baking sheet with parchment paper.
- Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Stir in peppermint extract and a drop of green food coloring if using.
- Gently fold in the cereal until evenly coated.
- Stir in the mini chocolate chips.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Chill in the refrigerator for 20–30 minutes or until set.
- Store in an airtight container in the fridge.
